**Lemon Truffles Recipe
1 cup Artisana Coconut Butter
juice of 1 lemon
2 tbsp lemon rind
no calorie sweetener of choice (I used KAL stevia - about 10 little scoops)
Heat the coconut butter for 60 to 90 seconds in the microwave. Stir. Add the lemon juice, lemon rind, and sweetener. Combine well. Spoon small amounts (I used a plastic teaspoon to make about 10 gram truffles). Freezer for 10 minutes then refrigerate. Let them come to room temperature before eating.
