R5 Phase 2 Day 51

Weight - 132.2

Oh my.  I had to step on the scale about five times this morning.  I couldn't believe my eyes.  2.2 lbs all at once and below where I like to be by just a smidge.  I've said this before I'm sure.  It may be odd, but I can tell when I hit below 133.  My upper abdomen, right below my bra band thins out all at once.  It's crazy.  My flesh there just seems to deflate with that number.  I also know from the past that these few pounds between 130 and 133 are where I get to feeling too thin.

The good drop can be attributed to several things.  One - the massage (maybe), two - the mini-steak day (fasting all day until dinner time), three - quite a bit of output overnight (I mean a lot), and four - getting a major decent night's sleep without early morning interruptions like the dog wanting out or the phone ringing several times.

I am also certain, based on the past, with a drop like this I am likely to rebound tomorrow.  So I'm sure I'll be back above 133.  I just hope it's not back to that 134 - 135 range I've battled for 5 or 6 days.

R4 Phase 2 Day 27

Weight - 136.2

Woot!  2.2 lbs from my mini-steak a la veal day.  Regular protocol today and then we'll see about tomorrow.  I have a massage scheduled for 3pm tomorrow and it may work to repeat yesterday's menu again.  I'm still keeping the total protein up, because it seems to be working.

Breakfast
Coffee with KAL stevia
with my Keurig Coffee Maker.  A lot of the flavored coffees available are P2 friendly.  Today I had Gloria Jeans Butter Toffee

Lunch - (198 calories)
**Buffalo steak and salad
150 g buffalo eye of round

sweet mustard dressing

R4 Phase 2 Day 20

Weight - 138.6

Nice drop of 1.4 lbs.  So the 2 lb jump from a couple of days ago are gone with .4 of it's friends.

Breakfast
Coffee with KAL stevia
with my Keurig Coffee Maker.  A lot of the flavored coffees available are P2 friendly.

Lunch - (177calories)
**Burger salad
100 g 96/4 ground beef (previously cooked)
125 g romaine
65 g roma tomato
35 g dill pickle
25 g red onion
I made a dressing with mustard, reduced sugar ketchup, garlic, pickle juice and water.

Afternoon snack - (127 calories)
175 g Fage 0% Greek Yogurt
50 g raspberries

Dinner - (159 calories)
**Lemon Pepper Mahi Mahi with braised spring onions and radishes
150 g Kirkland Mahi Mahi (Costco)
juice of half a lemon
pepper to taste
1 tsp capers
125 g French breakfast radishes
20 g Spring onions
mince garlic
water for braising

Marinate the fish in the lemon and pepper for about 10 minutes.  Place in a hot skillet, cook until white on the down side, flip, add water or lemon juice and cover for 2 to 3 minutes until fish is no longer translucent and flakes easily.  Remove fish from pan, add lemon juice and capers, reduce for a sauce.

Saute the radishes, onions and garlic briefly, add water and cover.  Check and stir a couple of times and remove from heat when radishes are just fork tender.

R2 Phase 4 Day 5

Ahhh.. back within my comfort zone.  My lean and green day brought me down 2 lbs so I'm within .8 of my LDW.  Still eating a bit on the lean side today though so the calories are on the low side.

Breakfast - (35 calories)
2 cups coffee with 2 tbsp half & half

Lunch - (252 calories)
125 g Jennie-O Oven Roasted turkey
150 g baby spinach
125 g roma tomato
60 g onion
4 tbsp Bolthouse Farms Olive Oil Vinaigrette - Balsamic

Dinner - (604 calories)
**Sirloin Steak and Roasted Radishes
380 g petite sirloin steak (raw weight)
340 red radishes, quartered
4 tbsp Bolthouse Farms Olive Oil Vinaigrette - Balsamic

I tossed the radishes in the dressing and baked for 20 minutes at 400 degrees.

Evening - (96 calories)
4 oz merlot wine

R2P3 Day 1

Weight - 159.6

Whooohooo day 1 of phase 3.  Looking so forward to half and half in my coffee, etc.

Starting out  much like I did for Round 1's phase 3. My first meal was lunch because my last drops were about 10 am on Wednesday morning.

Had 3 cups of coffee throughout the day with 1 tbsp half & half in each cup.

Lunch - (311 calories)
**TunaFish salad
6 oz low sodium chunk light tuna, drained
50 g celery
50 g onion
3 tbsp dill relish
1 tbsp Duke's Mayonnaise
pickle juice for more moisture
pepper to taste


Afternoon Snack - (181 calories)
4 oz Jennie-O Oven Roasted Turkey Breast, extra lean
1 slice Sargento Muenster cheese

Dinner - (432 calories)
**Spinach/Artichoke Chicken with French Green Beans
9.25 oz chicken breast
3 tbsp Harry & David Spinach Artichoke Dip
1 pkg French Green beans, microwave pack from produce section
1 tbsp Brianna's Real French Vinaigrette

Spoon dip over chicken breast.  Bake at 375degreesF until done.



Evening Snack - (109 calories)
1 small Zucchini hash brown
1 small Daikon hash brown

I was looking for an alternative to hash brown potatoes for my Christmas morning breakfast.  I came up with hash browns made with zucchini or daikon radish.  I decided to make a small batch for now and see how they turned out.  Because of the shredded parmesan in them they turn a bit dark, but they aren't burnt.  They are essentially shredded zucchini (or daikon radish), eggbeaters, shredded parmesan, and pepper, cooked in a mix of olive oil and butter.

R2 VLCD Day 33

Weight - 167.8

(Rolling up my sleeves)  Okay I can really do this.  I can really be in the 150s before Christmas.  I'm in the zone right now so instead of stopping at 40 days on December 10th, I'm going until Dec 22nd and be in P3 for Christmas morning.  I can skip the biscuits and hashbrowns for one Xmas breakfast, but I'll be able to have eggs, bacon, and sausage with no problems, as well as my famous prime rib for New Years Eve.


Breakfast
Coffee with vanilla cream liquid stevia

Lunch - (164 calories)
**Breaded scallops with a celery salad
120 g sea scallops
1 grissini stick, crushed
a few shakes of - tumeric, paprika, black pepper and garlic powder
215 g celery, diced
2 tbsp Braggs Apple Cider Vinegar
1 tsp dill weed
1/2 tsp garlic salt

Preheat oven to 375 degreesF. Combine crushed bread crumbs and seasonings in a baggie.  Moisten scallops and shake in the baggie to coat.  Place scallops and leftover coating in oven save baking dish.  Bake for 8 to 10 minutes until scallops start to crack open a bit.

I have to say for not being a scallop eater, these are the bomb!  I haven't been eating my grissini, but I decided I wanted something more than just seasonings.  Also I'll be danged if I'm going to leave any of the crumbs for the garbage troll.  I'm gonna eat those too!



Dinner - (233 calories)
**Baked breaded shrimp & roasted radishes
150g shrimp, uncooked, peeled and deveined
1 tbsp eggbeaters or 1 egg white
1 grissini stick, crushed
2 tsp Old Bay Seasoning
250 g red radishes, quartered
1 tbsp Braggs Apple Cider Vinegar
1 tsp dill weed
1 tsp Mrs Dash Tomato Basil, Garlic seasoning

Preheat oven to 400 degreesF.  Toss quartered radishes with vinegar, dill, and Mrs Dash.  Place in oven safe dish and back until fork tender (about 20 minutes).

While radishes are cooking, mix crushed grissini with Old Bay Seasoning.  Toss shrimp in tablespoon of eggbeaters or egg white and then into breading.  Place in oven safe dish and bake until pinkish, about 10 minutes.






Total calories for the day 397.
Daily Calorie Composition: 29% from carbs, 10% from fat and 61% from protein.

R2 VLCD Day 17

Weight - 174.8

My all protein day dropped me 1.6 lbs.  I am sick with a sinus infection and either brochitis or early pneumonia.  Doctor put me on phenergan with codeine for my cough and doxycycline as an antibiotic.  I'm hoping neither have much effect on my weight.

I did two things different today.  Since all protein worked yesterday, I'm foregoing any fruit and doubling my dinner protein.  I also cooked a fresh lean turkey tenderloin.  Something that is not on the original protocol.

Anyone looking for a great winter tea, try Celestial Seasonings Cinnamon Apple Spice Tea.  I'm loving it.

2 tsp Silver Springs Jalapeno mustard (for dipping)
225 g romaine
P2 tangy mustard dressing

Up just .6, but it's not abnormal for week two.

Chicken salad with sweet mustard dressing
100 g chicken breast
220 g iceberg lettuce
3 tbsp sweet mustard dressing

Afternoon Snack - (48 calories)
150 g strawberries

Dinner - (125  calories)
Fiesta Lime Shrimp and Roasted Radishes
120 g shrimp, raw, medium count, peeled, tail off
2 tsp Mrs Dash Fiesta Lime seasoning
1 tbsp lime juice
230 g red radishes
a few sprays of Braggs Liquid Aminos

I always use raw shrimp because I tend to make them rubber if they are already cooked.



Evening Snack - (114 calories)
175 g red delicious apple
2 tbsp Braggs Apple Cider Vinegar
1 grissini breadstick

R2 VLCD Day 4

Weight - 182.4

Very discouraging down only .4 this morning and that on the 3rd day of the low calorie diet.

Just a chuckle this morning.  I store my premade P2 dressings in little 2 cup Ziploc plastic containers.  I usually have a couple in the fridge.  I'd put some of my chicken broth in one also so that I could keep the larger container in my extra fridge in the garage.  I started heating up the broth and add a handful of spinach to it, and I get a whiff of vinegar.  Hmmm... spinach smells different than  I remember.  I finally realize that I didn't have the broth container, but the vinaigrette container!  I didn't want to lose a cup of vinaigrette so I drained it back into it's container and grabbed the broth!


Lunch - (176 calories)
Chicken & Spinach Soup
80 g (cooked weight) chicken, baked previously
1 cup chicken broth, made previously
1 cup water
150 g baby spinach
sat and pepper to taste

I love these quick meals when pretty much everything is already done.  I baked the chicken in a batch on Monday morning.  I've found almost always that 100 grams raw weight chicken breast baked out to be 80 grams cooked as long as you don't over cook it.  The broth I made by simmering a couple of chicken breasts in water with poultry seasoning, salt and pepper.  You can also buy chicken broth but watch out for sugars or corn syrup in the ingredients.  I always cut my broth in half by using an equal amount of water.

Heat up the chicken broth and water, add spinach in handfuls.  If you don't want as much spinach in the soup, you can always have the remainder is a salad with a P2 dressing.  I like mine on the fuller side.  When spinach is wilted, add cut up chicken breast and serve.



Afternoon Snack - (109 calories)
200 g granny smith apple
2 tbsp Bragg's Apple Cider Vinegar
garlic salt to taste
Yerba Mate tea

Yes I really do chop up the apple and mix it with the acd and garlic salt. Also I can't mention enough how I love the Guayaki brand Yerba Mate teas. Yerba mate is known for its antioxidant properties (moreso than green tea) as well as being loaded with caffeine and an appetite supressant. It comes in several flavors. The Chocolate Mate is great also!

Dinner - (160 calories)
Steak and Roasted Radishes
95 g sirloin tip steak, raw weight, lean only
225 g red radishes, tops and ends cut off, and quartered
A few sprays of Bragg's Liquid Aminos
Salt and pepper to taste

Season the steak as you wish and cook in your favorite P2 manner. I baked mine this time along with the radishes. The reason for the 95 gram portion is because the piece I had came to 380 grams total and that was the best way to split it out into four servings, because three servings would be too much protein.

**Roasted Radishes
Heat oven to 425. Cut the tops and ends off 225 grams of red radishes, the cut into quarters if they are large. Place in a small baking dish, spray with a few sprays of Bragg's Liquid Aminos, sprinkle with salt and pepper, and cook for 30 minutes or until easily pierced with a fork, tossing at least once. I've seen the radishes done with a spritz of cooking spray also.

When people think of radishes, they think of the little peppery slices of red radish that come on a salad plate. Before starting round 1, I noticed that radishes were on the limited list of vegetables and thought "why would I eat just cold radishes when they are so peppery?" Thing again! Roasted radishes take on a sweet flavor and have the consistency of potatoes. They are a great change from the other veggies.

HCG Diet Phase 4 Day 37

Weight 185.2

Wondering if the wild rice was the cause of the 1 lb jump.  Guess we'll see how it plays out over the next few days.  Perhaps I won't eat the second portion I made.

Breakfast - (422 calories)
Ham, cheese, and veggie omelette
1 egg
1/2 c eggbeaters
100 g leeks
60 g mushrooms
56 g Oscar Mayer cooked ham
28 g Tillamook Cheddar
2 tbsp salsa
10 oz coffee
1 tbsp half & half

Lunch - (258 calories)
Garden salad with lean turkey
84 g Fresh Express Sweet Tender Greens
120 g cucumber
80 g roma tomato
60 g kosher baby dills
120 g Foster Farms Hickory Smoked Turkey Breast
3 tbsp Marie's Parmesan Caesar Yogurt dressing

Dinner - (483 calories)
Chicken with Daikon Radish "Fettucini" with garlic Caesar Parmesan sauce
200 g (raw weight) boneless skinless chicken breast
1 4" to 6" length of Daikon radish
4 tbsp Parmesan Caesar Yogurt Dressing (Bolt House Farms or Maries)
1 tsp margarine
1 tsp olive oil
2 cloves garlic
pepper to taste
2 tsp capers (optional)
Sprinkle of grated parmesan cheese

If you have a spiral slicer, make fettucini noodles from the Daikon. If you don't have a spiral slicer, use a vegetable peeler to make long noodle-like strands down the side of the daikon. Place in a bowl of warm salted water for 15 minutes and drain.

Cut chicken in bite sized pieces. Heat olive oil and magarine on medium in a saute pan, add garlic and saute until it starts to brown. Add chicken and pepper, tossing occasionally until no longer pink. Remove chicken from pan, leaving any garlic, butter, and oil + juices in the pan. Put drained daikon into the pan drippings, saute lightly. Add back chicken along with the Parmesan Caesar dressing. Saute, stirring to heat through. Plate with a sprinkle of parmesan cheese and capers.

I use the yogurt based dressing rather than alfredo sauce because it's less fat and I light the taste better. Could substitution any alfredo sauce, white sauce, or caesar dressing.


Total Calories for the day 1,163 (may add an evening snack)
Daily Calorie Composition: 16% from carbs, 39% from fat and 45% from protein.

HCG Diet Phase 4 Day 5

My weight was down 1.8 lbs this morning and under my LDW. I'm kind of licking this.

My Saladacco Spiral Slicer arrived today! I'm going to use it to make veggie 'pasta'. Making lasagna for the rest of the family tonight, so I'm going to have veggie spaghetti!


Breakfast - (847 calories)
*Carne Asada Frittata - say that three times fast
12 oz (raw weight) Trader Joe's Carne Asada thin sliced beef
1 large egg
.5 cup eggbeaters
80 grams onion chopped
80 grams bell pepper
2 tsp light margarine
10 oz coffee
1 tbsp half & half

I'm loving frittatas these days. This one was a little larger than I planned, but I had the carne asada meat already cooked and leftover from a few nights ago.

Turn on oven broiler. In an oven-safe saute pan on medium heat melt the margarine and add onion and bell pepper. Sautee until soft. Add chopped beef and stir to warm it. Whisk egg with eggbeaters. Turn the heat on the pan down to low, stir in the eggs and cover for 3 or 4 minutes until set. Place pan in oven under broiler for 3 minutes more until the top is cooked through.


Lunch - (231 calories)
*Chicken salad and sweet slaw
116 grams chunk white chicken breast (I used half a 12.5 oz can and drained it)
1.5 tbsp dill relish
40 grams onion, chopped
60 grams celery, chopped
1.5 tsp Duke's Mayonnaise
1.5 tsp yellow mustard
140 grams Angel Hair cabbage slaw
1 fl oz white wine vinegar
stevia to taste

The chicken salad is really a double batch (these numbers reflect half of what I made). I'll eat the rest tomorrow. Stevia is added to the vinegar to make a sweet dressing for the cabbage.


Dinner - (572 calories)
*Alla Vodka sauce with ground beef and veggie pasta
4 oz lean ground beef
1 cup alla vodka pasta sauce (or other sauce)
140 grams zucchini
200 grams daikon radish

Brown the ground beef and drain. Add the pasta sauce and warm. The zucchini and daikon were run through my Saladacco Spiral Slicer to make long thin 'pasta'.

VLCD Day 25

Breakfast 
Coffee with Stevia

Lunch
100 g veal, thin sliced
1 tbsp capers
1 tbsp lemon juice
15 g anaheim chile
300 g tomatoes, diced
P2 protocol dressing 

Saute veal with lemon juice, capers, and chile.

Afternoon snack
None

Dinner
100 g halibut
2 tbsp Marukan Ponzu Sudachi Citrus Marinade
250 g daikon radish, sliced
salt and pepper

Marinate halibut in ponzu then baked at 350 degrees 10 minutes or until fish flakes.
Season daikon with salt and pepper and bake until it starts to brown a bit.

Evening Snack
None
