HCG Diet Phase 4 Day 18

Really testing the limits today.  We'll see how things go on the scale in the morning

I haven't had fried green tomatoes in eons.  I've had a couple of green tomatoes in my fridge for a week and finally decided I was going to use them today.


Breakfast - (212 calories)
Whole wheat bagel thin, half with reduced fat cream cheese and half with light butter and apple butter.

Lunch - (368 calories)
Quinoa salad with hearts of palm, artichoke, onion, celery, French vinaigrette dressing


Afternoon Snack - (71 calories)
Tuna fish with lemon juice, dill relish, and capers.


Dinner - (778 calories)
Panko/parmesan crusted pork cube steak with unfried green tomatoes
I used 1/4 cup panko crumbs and 1/4 cup shredded parmesan to lightly coat pork cube steaks then fried them in a light amount of olive oil and drained.

Unfried Green Tomatoes
1/4 cup whole wheat flour
1/4 cup yellow cornmeal
1/4 tsp salt
1/4 tsp pepper
2 or 3 green tomatoes sliced about 1/4 inch thick
1/3 cup non-fat milk
cooking spray

Preheat oven to 400 degrees
Combine dry ingredients in a shallow dish. Dip tomato slices in milk, dredge through flour mixture. Place on a baking sheet or wire rack in the oven, lightly coated with cooking spray. Bake 25 minutes turning after 15.
* Mine didn't brown the way I wanted so I put them under the broiler for a bit.





Total calories for the day 1,429.
Daily Calorie Composition: 34% from carbs, 33% from fat and 33% from protein.
Probably one of my highest carb days so far with the bagel thin and the coating for the tomatoes and pork.
